TO celebrate National Chip Week (February 15-21), Mark Petrou of Petrou Brothers fish and chip shop, was cooking on Ely Farmers market last Saturday (13) at 11.00am. Mark sourced his ingredients from the Farmers market. "There was a wonderful choice", he said. He cooked smoked haddock fishcakes, mushy pea fritters and cheese, bacon and onion fryits. All the recipes were based on mashed potato and deep fried in a portable deep fat fryer. "I wanted to show people that you can do more with a spud than make chips", said Mark. "All the food took three or four minutes to prepare and cook and I was able to demonstrate how good, tasty food can be prepared quickly and cheaply. I managed to feed more than 60 people for �12 in the 55 minutes I was there", he said.

"It was loads of fun and it felt good to give food away, highlight the quality produce which is available at the farmers' market and demonstrate my skills. Master frying is a skill and I am passionate about it", Mark told us.
