POLICE used CS gas to restrain banned driver David Taylor, after he bit an officer trying to arrest him.
He had been stopped while driving in Waitrose car park at Ely, and when told to get out of his black Vauxhall Cavalier he drove off at speed.
A police car was used to block his exit, and he struggled with officers when they tried to get him out of his vehicle.
"Police took him to the floor to restrain him," prosecutor Emma Dmitriev told Ely magistrates on Thursday. "He was not compliant. He lunged towards PC Alan Radford, trying to bite him, and then bit PC Ryan Carter on the forearm."
Taylor, 39, of New Barns Avenue, Ely, had earlier denied charges of assault and failing to stop for an officer, but was found guilty at a trial. He had admitted driving while disqualified and without insurance.
Police had followed Taylor after seeing him get into a car in New Barns Avenue on October 19, said Mrs Dmitriev. He had driven along Deacons Lane, Lynn Road, High Street and Brays Lane, before entering the car park.
He swore at officers when they asked him to leave his vehicle, and drove off around the car park. When stopped, he undid his seat belt, and struggled with police.
Representing Taylor, Sandeep Kainth said his client was already subject to a community order, and his detoxification was going well.
The magistrates gave Taylor a 120-hour community work order and told him to pay £100 compensation to PC Carter, and pay £100 costs. After he paid the £200 immediately, £695 of his outstanding fines was wiped out, and he was ordered to pay the remaining £974 at £80 a month.
